Here's a quick video on how I trim my competition St. Louis ribs. First, I remove those rib tips of cartilidge that run parallel down the side of the rack. Then, I always remove the end bones. The larger bone is usually really fatty, and the smaller one has a skinny bone not worth cooking. Pull off that pesky membrane. You can get a good grip on it with a paper towel.
